It's a shame that there is so little action in the "what's cookin'?" section in a kitchen knife forum. We should keep a thread running of what we actually cook with all of our fancy knives :D Today's lunch was Ribeye, roasted taters with crispy garlic, pan sauce with gorgonzola, mushrooms...

In my mind size does matter...at least when discussing Suji's!
The Shindo looks so nice but a 240mm Suji is almost not a Suji!
For me 270mm is the bare minimum. 300mm is the sweet spot.

Bought some lovely Corvina from our local fish seller, Juan.
Cooked it up with some peppers, onions, parsley and garlic in a lemon, butter and wine sauce.

I have a Konosuke HD2 300mm suji and it checks all the boxes you list. It's semi-stainless, so you don't need to immediately wash it after use, it's wicked sharp and it's ideal for slicing cooked meats (cutting cooked brisket is it's #1 task in my kitchen). The main ...oops sorry.....difference is obviously the claws, or lack of. But as far as taste goes they are quite different. Maine are cold water creatures and their flesh is a bit sweeter than the Spiny variety. But Spiny lobster come from many different locations and therefore taste a bit differen...

Lobster with lemon garlic and red pepper sauce.
We get our fish from one of the many local sellers. This is one of the best fishing spots on the Pacific Central America coast so its always amazing and fresh...and so cheap!!!!!

Our new house will have a nice outside kitchen as we eat most of the time outside and I love cooking over live flames etc. My number one priority is to include a griddle.
