Re: Which suji would you pick and why

In my mind size does matter...at least when discussing Suji's!
The Shindo looks so nice but a 240mm Suji is almost not a Suji!
For me 270mm is the bare minimum. 300mm is the sweet spot.
Good luck with your choice...so many lovely Sujis out there.

Re: What did you cook today?

Bought some lovely Corvina from our local fish seller, Juan.
Cooked it up with some peppers, onions, parsley and garlic in a lemon, butter and wine sauce.

Re: What did you cook today?

Lengua! Painfully missing from my taco-meat repertoire was tongue. I had tongue at a festive dinner in Santiago forty years ago, and half-remembered it as oddly good. Covid happened, and Walmart tongue doubled in price. Still, I sprang for one. The recipe is quite simple: onions, garlic, carrot, pa...

Re: WTS Selling - Devin Thomas ITK 270mm Wa-Gyuto AEB-L - Custom Handle $540 + Shipping

You can’t sell a Jeep (even with the coveted Limited Edition device) that you bought new over a decade ago for $30k, then put 170 thousand miles on, for $54k. Ha, that pretty much sums up the used jeep market The used car market is completely (short burst of static). Hey.... I resemble (sic) that r...

Re: WTS Selling - Devin Thomas ITK 270mm Wa-Gyuto AEB-L - Custom Handle $540 + Shipping

Hi Mauichef, I regret that I received some feedback on KKF and updated the listing late last night but was unable to update this listing until today. It is now updated and and all information is disclosed to the best of my ability. The price is also listed as $540 + shipping as it is on KKF. Unfort...

Re: WTS Selling - Devin Thomas ITK 270mm Wa-Gyuto AEB-L - Custom Handle

@claudiowalker I Need to make some comments here. Just so you know.... you cannot run auctions on this forum. Second you HAVE to use pictures. How do we know the knife is real. And most important is that you disclose ALL relevant info which as far as I can tell you have not done here. I have seen th...

Sorry about the crappy photos and plating. We still don't have our "stuff" here. Should arrive in a week.

Re: What did you cook today?

I'm going to have to try this method for sure. I sometimes catch ribs on sale or BOGO and don't have the time to smoke them. I'd like to know what you're using to keep your charcoal centered, Ronnie. I've been cooking, if not as much as usual since it's my busiest time of year at work. I've also ha...

Re: Sujihiki recommendation, please

I have a Konosuke HD2 300mm suji and it checks all the boxes you list. It's semi-stainless, so you don't need to immediately wash it after use, it's wicked sharp and it's ideal for slicing cooked meats (cutting cooked brisket is it's #1 task in my kitchen). A great knife! A brilliant knife indeed. ...

Re: What did you cook today?

The main ...oops sorry.....difference is obviously the claws, or lack of. But as far as taste goes they are quite different. Maine are cold water creatures and their flesh is a bit sweeter than the Spiny variety. But Spiny lobster come from many different locations and therefore taste a bit differen...

Re: Sujihiki recommendation, please

I have a few Suji knives, 300 and 270. I love the style. As Jeff said its only an inch...but funnily it makes for a very different feel. The 270 is easier to handle and control but the 300 is king for larger cuts and slices. I agree about the attraction of a stainless blade when carving etc. And I a...

Re: Want to get a cast iron pan

If I try to think of what I would be cooking in it off the top of my head, sautéing onions, cooking up taco meat, cooking chicken sausages, are all frequent tasks, and I was hoping that I would be able to cook eggs and pancakes on it too, but those are things that need some non-stickness, even the ...

Re: Want to get a cast iron pan

I'm familiar with Lodge but have never tried the substantially more expensive Smithey. Does the polished interior on the Smithey give it any advantage over a properly seasoned Lodge? I was curious of this myself, with eggs for example, does a smooth surface finish make it any less prone to sticking...
