Look at gengetsu semi-stainless at JKI. $300 for the 210mm. Stays sharp forever. Very flat profile.

Grilled salmon and asparagus with some crusty bread. Once you grill salmon there is no going back, the only way to cook it imo.

At that price point you might look at something like a Gengetsu Semi-Stainless 210mm gyuto from JKI. Great all rounder with a steel that stays sharp for a long time.
