Re: Left handed user advice

Only specific lefty knife I have is a honesuki. In that case it can matter. Pretty much everything else on this site is suitable for all users.

Re: Konosuke HD2 or YW

The YW is much flatter. Not great for rocking herbs. The HD has more belly and is more versatile. If I were to own one knife, it would be the HD.

But I have other knives that can rock. The YW is one of my most used knives. A touch stouter, relatively speaking, but cuts like a dream.

Re: One year annisversay of Ken Schwartz passing tomorrow.

Well, Ken does live on here. He was an eccentric fellow and funny to deal with at times, but he was exceedingly generous with his time and so knowledgeable. His mastery of stones and sharpening were invaluable to me. And you couldn't help but get a good dose of yen and philosophy at the same time. P...

Re: WTS: Yoshimi Hino 240 W2

Yeah, I am already looking at handle options. I'll just get a new one if I keep it. The loss of money on the sale of the knife would cover most or even all of the cost of a new handle. Really nice knife. Only other Yoshi I have at the moment is a Koishi, though I am not sure if he or his father made...

Re: WTS: Yoshimi Hino 240 W2

I am handed right, so it works for me. Having used both D and octagon, to me there is a slight difference. Having said that, most often I prefer a D handle. It is much more the size rather than the shape for me though. Wonder how many people understand what a deal this is. GLWS I do have one other ...

WTS: Yoshimi Hino 240 W2 - SOLD

Height: 52 mm Length: 241 mm Weight" 6.85 oz This knife is brand new. I bought it during the anniversary sale and used it for exactly one meal. Great knife - it's a Yoshi - but it has a pronounced D handle. As a lefty I don't like most D handles. I didn't notice the handle in the description wh...

Re: WTS: Kurosaki AS 240

I have no need to sell it. It’s the second one I owned. I jumped on it after it briefly bécame available again after a long while. But I just haven’t ended up using it much. It falls between my Koishi AS and Ryusei AS. My Koishi has to be one of the better versions ever made. Best tip of any knife I...

I’ve been planning to get the Hino. Y Kato is a chip off the old block. The sale tipped the scales.

Re: FS: Takayuki Ginga 240

For whatever reason the lower-end and mid-tier Takayuki’s don’t seem to get much love, Rob. Not like the high-end Takayuki ginsans (some of the best knives I’ve ever used.) The Ginga is a nice knife. Since it hasn’t sold I’ve been using it again. Interesting steel. Cuts a bit like a laser but feels ...

Re: What is the best stainless knife for me?

Reactive carbon steels are generally harder. They take a sharper edge and hold it longer. The downside is that they can rust or discolor and need more care. They also tend to be a bit more brittle and can chip more. The stainless knives on CKTG are exceedingly good, however, and can match reactive k...

FS: Takayuki Ginga 240 - SOLD

Got this earlier in the year as a "buy to try." Used it for a few hours over a week. Basically like new. Might be a tiny, tiny scratch (barely visible) on the ferrule, but it might have been there all along. Didn't notice until today. Never sharpened. Touched up on balsa, cow and kanga lea...

Re: MERRY CHRISTMAS & A HAPPY NEW YEAR

First holiday in a long while I haven’t bought a knife! Got the money and some candidates but … I am all cooked out!

Here’s hoping for a more normal 2022. All the best to everyone this holiday season.
