Currently, although not all stones are used in every session
atoma 140 -> gesshin 400 -> gesshin 2000 -> gesshin 4000 -> natural at LV 2.5 -> natural LV 4-5
or
atoma 140 -> jns 300 -> jns 800 or 10000 -> jns blue aoto or red aoto -> jns 6000 -> natural LV 4

The double thick 500 is in stock and that is the only one that counts! Buy that one and don't look back. That said, there are always alternates as you put it. I would like to see more sheath knife and folder offerings from some of the manufacturers. I know you did some of these before and I assume they were not great sellers. Outside of Arizona Customs there are very few sites featuring Japanese blade smiths in the US offering outdoor or EDC knives... +1...

I agree with the statement on the Beston 500. A damp pile of sand. The Bester 1200 is still a good standard mid-grit stone in my opinion. When I started looking into kitchen knives I went with the standard recommendation on many sites and picked up a Tojiro DP. I did not buy the knife from this site...

I have both stones and the real difference is the level of hardness. The red is a softer stone more in line with the JNS 800. +1 on the above and the CKTG set. If you want to save some money you could start with the Bester 1200 and Suehiro Rika 5k along with the CLTG flattening plate. Near $100 would be the 8000 Naniwa Snow White. The 8000 grit Gesshin is also a great stone and one Jon recommends as a follow up to the 4000 or 6000 grit Gesshins.
