the Misono 440 is a good value for money, i can't recommend anything else because that's the only one I tried so far, it's a 150mm, cost around 140-150$

Nice work ! The fastest way I've found is using a buffer. I use diamond bars, especially on the more abrasion resistant steels. If you are looking to slice cooked meat i recommend you use a sujihiki not a yanagiba.
