Re: Honesuki

the Misono 440 is a good value for money, i can't recommend anything else because that's the only one I tried so far, it's a 150mm, cost around 140-150$
it's very easy to sharpen and keeps a good edge.

Re: YANAGIBA HELP

All good points ! In most instances you can accomplish a cut in a single slice with a 270 or less if your edge is sufficiently sharp. A fuguhiki (lighter yanagi ) is often all that's required. Consider yourr work area. Drawing a 330 mm blade uses 660 mm of length. --- Ken " Drawing a 330 mm bl...

Re: polishing a ux10 stainless steel blade

Nice work ! The fastest way I've found is using a buffer. I use diamond bars, especially on the more abrasion resistant steels. Grit, cimpounds and wheel types will depend on the steel and scratch depth. You can also use a belt for some of the work, applying differential pressure around the Kanji t...

Thank you,
about 2-2.5 hours,
if the knife is in a good condition usually don't spend more than 10 minutes at each grit, even less on the higher grits.

Re: Custom Saya covers

Chef Eitan!!! I hope you are loving them. Thanks for sharing! Cody, I absolutely LOVE those and I'm using them daily at work, your work is amazing and my only problem is that I use only a few blades at work, otherwise, I would have to send you all my knives to fit a saya and you would have had to s...

Re: Paring Knives under $100

I love how this has become the "Shameless Love for Cheap Paring Knives" thread. when you can get the job done and get your value for money why wouldn't you save on simple knives like paring? whats the point in dropping more cash on something that simple? this is not the place to prove you...

If you are looking to slice cooked meat i recommend you use a sujihiki not a yanagiba.

Re: Paring Knives under $100

I have used many small task knives and this is by far my favorite! the value for money is simply unmatched in my opinion 3 knives for all small tasks and my favorite is the 2" birds beak. I think I paid $20 for the set last time I got it. it's not a fancy brand but it simply does the job. check...

Re: polishing a ux10 stainless steel blade

@kalaeb this is the first time this knife got a polish job, so I guess not enough metal was removed to get to the mark. I started with 400 grit to make sure I get the deepest scratches removed, also made sure to wash and wipe constantly so I get a better visual of the progression. this way I was onl...
