I have two nakiri. One is the short 135 Ogata R2. The other is a Yamashin 180 white 1 that I sent to Taz who found the knife hiding inside that hatchet. Both (now) slay onions. Have you thought of a Nakiri? Not sure how they do on onions. Although it looks like most, if not all, have a rounded tip, which I don't think is what you want. I am curious, how is the tip for the initial horizontal cut on onions? (after halving and laying the inside of the onion down flat).

I have been looking for a Ginsan knife for a long time, and this one looks like a possibility!!

Yes, esp on the first stone of whatever progression I am using I start with several strokes per side (same for each side) and reduce the number towards the end, finishing with single strokes. I finish each stone with stropping on that stone. Also, I am constantly feeling the edge for burr...

Thx ex1580! I will try that. I was thinking stopping at 1000 (or 1200 if I get a combo diamond plate), but I can stop after the 320 water stone I have and strop and see how things look.

Thx Kekoa! My top choice is supposedly hardened to 59 - 61. Since I would not use it for rough duty, I probably would be fine going higher than 1000, more like I do with my kitchen knives.

Thx taz! I just thought EDCs would be associated with much rougher use than kitchen knives, and would be refined to a lesser degree.

How high did you go with the EDC? All the way to the 8k?

Mark has a really inexpensive 400/1000 combo diamond plate, I just wonder if that is flat enough given the price?

What are you thinking when you say 'coarse?

I agree that if only one diamond stone is used early in the sequence is the best place for it.
