Re: Possible Okeya passaround

What a ride. These knives have not seen a smooth passage, and I am not the least to blame for that, but undeterred I think they're going to do just fine. I wanted to post a few thoughts on each of these knives. It is the very least I can do. I did receive them in good working order. I sharpened and ...

Re: Affordable S-Grinds?

All Takeda are forged in S grinds. Hold the grind up to a straight edge, check it out for yourself.

Re: Affordable S-Grinds?

I'm not sure if you're aware, but Takedas do have forged in S-grinds. Otherwise I think you're going to be best off looking for knives with solid convex grinds and some backbone if you want better release in budget. Maybe a Tanaka or a Kanehiro.

Re: First Stone Set

The Kohetsu line is formulated for high alloy steels. If you just want to sharpen VG-10 or the like, their strengths are not strictly necessary, though gladius and others like them a lot for many purposes. I haven't used the stone, though at that price it is tempting. I will be buying a few stones s...

Re: Ordering direct from T-F

A little off topic, but this thread did inspire me to action. A while back I signed up for email alerts on a Gesshin Heiji thinking I would fully consider the purchase when they came back in stock. When they did recently stock I did a little homework. I don’t think anyone else in the US sells Nakaya...

Re: Gihei Nashiji Aogami #2 240mm gyuto

I’m glad this review had legs and I’m glad willic likes the knife. I still think the Gihei is an incredible knife and if my situation were different I would certainly not have sold it. Rereading this thread also makes me desperately want a 270mm version, which if it had that flatter tip I imagine wo...

Re: First Stone Set

At that rate of use in a home kitchen a set of stones would last for decades. I have been sharpening my work knives seriously for about four years and my most deeply used stone is the first good corse stone I bought, a Shapton Pro 220, that has years of life left after being used to reprofile and fl...

Re: Nakiri for line/prep cook (<$70)

I would say no, the Misuzu is not the best entry knife, but they are a great choice on a budget. The handles on them are cheap and they are pretty thin with simple grinds, enough to be a little prone to food sticking, but they outperform most widely available knives out there. My usual suggestion is...

Re: First Stone Set

What Benchmades and Spydercos are you hoping to sharpen? Modern pocket knife steels are often more heavily alloyed than water stones usually handle well. If you hope to sharpen the likes of S90V, M390, or 20CV, you’re not going to get the best results with water stones without some gymnastics or a h...

I also think I remember that cedarhouse is a pretty big guy, tall with larger than average hands. salemj and I are not; I’m pretty dimensionally average. We’ve touched on it before and I do think there is something to be said for big people legitimately favoring big knives and small people favoring ...

Re: Nakiri for line/prep cook (<$70)

I think you should consider a few Misuzu lines. They cost a bit more than the ITK, but open you up to stainless claddings. This will make a big difference in practice; all the clad Tojiros are more reactive than normal, which is not fun on a work knife.

Re: Makoto AS Nakiri

As part of the group buy passarounds the knife is usually auctioned off starting at the end for the price of the knife to the organizer. Excess would go back to the participants I guess. It’s pretty informal and I don’t know if anyone has bought the knife at the end. I know the Matsubara did not sel...

I should not have asked. I checked out those websites and even bands are an awful, awful hole. I think with two or three bands and one watch I'm good for my current lifestyle, but this could get bad real quick. Ordered a Clockwork Synergy band off Amazon to see how I like it; we'll see where this go...

Re: Looking to buy 3 pro knifes same brand

I said I would come back to this later and every time I try I hit on two things, your preference for rocking and the prohibition on a traditional length slicer. Very few Japanese knives come made for rock cutting. The harder steel they're usually made from doesn't do that well with the twisting that...

Re: Good stone for D2.

With how a factory worker might use them, you're probably correct. Even the sturdier ones will wear fast with a lot of pressure, which might be best in this sort of setting. If they're usually able to dress it with the 1200 King they can definitely start with the 1000 Shapton. That might be all they...
