All Takeda are forged in S grinds. Hold the grind up to a straight edge, check it out for yourself.

I'm not sure if you're aware, but Takedas do have forged in S-grinds. Otherwise I think you're going to be best off looking for knives with solid convex grinds and some backbone if you want better release in budget. Maybe a Tanaka or a Kanehiro.

The Kohetsu line is formulated for high alloy steels. If you just want to sharpen VG-10 or the like, their strengths are not strictly necessary, though gladius and others like them a lot for many purposes. I would say no, the Misuzu is not the best entry knife, but they are a great choice on a budget. The handles on them are cheap and they are pretty thin with simple grinds, enough to be a little prone to food sticking, but they outperform most widely available knives out there. What Benchmades and Spydercos are you hoping to sharpen? Modern pocket knife steels are often more heavily alloyed than water stones usually handle well. I think you should consider a few Misuzu lines. They cost a bit more than the ITK, but open you up to stainless claddings. This will make a big difference in practice; all the clad Tojiros are more reactive than normal, which is not fun on a work knife.

I should not have asked. I checked out those websites and even bands are an awful, awful hole. I think with two or three bands and one watch I'm good for my current lifestyle, but this could get bad real quick. With how a factory worker might use them, you're probably correct. Even the sturdier ones will wear fast with a lot of pressure, which might be best in this sort of setting. If they're usually able to dress it with the 1200 King they can definitely start with the 1000 Shapton. That might be all they...
