I'll gladly and appreciatively take any two rolls available, the lighter the better, but your choice.

Re: Shibata Type 3 AS and Kashima Question

Ive owned a kashima, kotetsu R2 and kotetsu AS. Still own the last 2. The kotetsu R2 is peculiar because of the k-tip and the flatish profile. Not a rocker (or you better be uber-careful with that thin and exposed tip). The kashima is a KS-esque profile, and the kotetsu AS a bit more curve. Out of a...

The best all around weather in the US is San Diego. Most of HI would be a close second.

Re: What was your first job?

Did the various pre-W2 jobs like paper route, babysitting and lawn mowing. After getting a $500 speeding ticket when I was 16, my parents made me pay it,which meant a real job - bagger (aka "courtesy clerk") at Vons making less than minimum wage (legal because you were on 90 days probation with unio...

Re: Knife Safety

I put my 'nicer' knives in a cabinet above a fridge. I'm 5'9" and one daughter is 5'7". We are the only two that can reach them. And she has her own knife with custom purple handle. So they are safe. I put the others in a knife rack in a drawer.

Like the profile on RD. Reminds me of the Kamo R2 a bit. Of course PB is my favorite.

A 240 was my first j knife. good steel. Reacts wonderfully to a quick strop and holds a good edge. Handle remains one of my all time western faves

Re: brussel sprouts

3" artifex paring in hand, same as nmiller. Just takes some time. And dont be shy about trimming just above the stem to pull off a few outer leaves...gets to the more tender parts. I'm a sucker for balsamic glaze, shallots, bacon, parm. Maybe some fresh sage and/or splash of brandy if I'm feelin fri...

Re: WTS: Masamoto KS 255mm Gyuto

I'll vouch for Antonio, the seller. And the knife too, seeing as he bought it from me.

It was a legit NIB when sent to him with very well done custom handle.

Seller was prompt and couteous.

If you are itching to try this knife, get off your butt and pull the trigger. Dont expect it to last long.
