For everything but rocking, the R2 Ktip is an exceptional knife. Damn thin but has decent release. Great profile for chopping and pulling. If push cutting, be mindful of that tip. Tons of discussions about patinas. Just search.

You'll need to take off the old patina to let it even out. But you might want to let it be - may turn out kinda cool with some patina set in deeper than other areas.

You can take the rest of the lacquer off. I've used finger nail polish remover before with no issues. Just rinse with soap and water when you are done to stop the process.

Lepus is dead on. A 200mm gyuto I got from him had about 2mm depression in the spine where the core steel was beneath the cladding, and also had a small hump in the transition at the profile. With your budget and requirements for Stainless or semi, I’d recommend the 240mm Tanaka Ginsan Nashiji with K&S Special. I bought a used classic takeda gyuto and it has a fair amount of KU rubbed off. I think it adds to the rustic look and is minimally reactive.

Take a look at the french profile subpage on CKTG. I don't know if any are a 'replica' or 'copy', but they do have similarities and attributes that justify being on that page. I've got my personal favorites, but I'll keep it quiet for now - lots of different flavors to taste.
