Thanks. I tried shellac on a recommendation on the cocobolo and didnt like the finish. While I had success woth shellac on other oily hardwoods, cocobolo is unique and in a world of it's own. Doesnt help that I am allergic to it either. Ended up sanding off and refinishing. Danish was a good comprom...

I will vouch for this knife. The Akebonos have a tremendous grind (look at choil shot and you will see what I mean) and very approachable profile. Fit and finish is reminiscent of Kono Fujis. Shiraki is the Smith. You will not regret buying this knife.

Lsboogy, sounds alot like a knife Carter did for me a few months back. KS sabatier profile, blown out to 275mm, bit of back belly ala recent konos. A lot of the Japanese makers sub-out certain parts of the process, which tends to keep costs down and speed up production time. If one person in a collective or village is great at grinds, another at finish sharpening and another at handles, why not farm out to those specialists and let them do what...

Dont overlook the bessaku. Great deal on solid knife, can try a honkatsu with minimal investment. You'd be surprised. For trimming, a terayasu fujiwara 150mm petty is my go to. I think I grabbed one straight from maker for 80 bucks or so. I wont go anywhere near bone with a knife at that high of a H...

Para 2 is my favorite. Good size - small enough it doesnt bug me on my belt or in pocket, but large enough blade to be quite utilitarian. Cut up some tri tip up in the desert with it last week. Like butta'
