Re: Jacque Pepin knife skills

I've had two sets of scan pans. They are now in my trailer for camping. I'm done with them for day to day stuff. Not super impressed. The fry/saute I used most (10" in believe) was replaced three times in first 4 years. Handle got loose twice and metal failed on other. Had to take two other pans bac...

WTB Kono Fuji FM gyuto or funi

Yeah, I know. So does everyone and his/her mother. But if you got one and are thinking of parting with it, LMK. Preference for 240mm, but would consider a 210mm.

Re: Charles Atkinson Pass Around

Much like Ray and Blue, I found the knife to have a certain aesthetic value, but not so much on performance. Aesthetically, it is just cool. Reminds me of something you'd see on a wall in a medieval castle or perhaps dungeon. The styling is aggressive. The KU finish, especially the notes here and th...

Arrived today. I'll be passing along Saturday a.m. as I'm heading out of town. I'll post my impressions, but don't know if that will get done before I return.

Re: Favorite non-chef bladed implement

Love my EDC Spydy Para 2 http://i60.tinypic.com/2du0ab9.jpg Same for me with different steel. Used mine this last weekend to fish out a firewood splinter from my hand while camping. Pretty awesome how pointy the tip is after quite a few years. I've tried carrying smaller EDC, but this ends up back ...

Agreed. Expecting a great profile. Hope I get one.

Nice part about Konosukes - if you are lucky enough to grab a Fuji or Toro and somehow dont like it, there are plenty around to help you remedy that situation.

Re: Konosuke Updates

Kosuke told me that he's preparing these currently. x20 FM B#2 Funayuki Wa-gyuto 255 (Ho Oct.) I'll put a starter page on the site today so those of you that have interest can sign up. Are these a fujiyama FM line, or FM team on a different line. Needless to say, its confusing as to what this will ...

Re: To Mandoline or Not

I love mine. Use it quite a bit for potatoes - fries (shoestrings especially), scalloped, etc. Plenty of inexpensive models, including Benriner. The half dozen or so different models I have seen all have blades that you can sharpen. The big question for me is if I have enough slicing to justify the ...

Re: WTS: Yoshikazu Ikeda B#1 240mm Honyaki

Damn, that hamon is outstanding for Blue. The few smiths I have talked about it with all warned me not to get my hopes up for a pronounced hamon in Blue. But that looks as defined as White.
