I've tried several frosty or matte style Damascus finishes and they tend to be sticky.

I'd go kohetsu profile too. Mainly because if I'm going to get a 165 tall petty that's pretty much like a santoku, then I'd just get a santoku. Jmo

Kuro Laser 210. Mines quite thin, and performed on par with my Kono hd2 in the tasks I compared them with. Kono may be a half a hair more fluid. Here's the choil:

Thanks J. Ya it's curiously inreactive isn't it? I know what you're talking about with denser ingredients, I had the same thing with a bunch of celery. I think it just lacks heft. My interpretation anyways. And ya, it does lack the ability to do a couple all around tasks that say a santoku could do....

The site correctly notes that the higher end version with the satin cladding is stainless. The pattern welded cladding model is apparently fully reactive. Steve's videos are based on an initial miscommunication. I guess you are right. I overlooked where it said stainless on the site and went direct...

I find myself using a 210 for pretty much everything. Even on larger ingredients, if I don't wanna bother getting out another knife, the 210 will suffice. Like kit, I either use a 210 or a 180ish bunka or santoku.
