Re: Blade Refinishing and Repair

I recently saw that cktg has a thinning service now. I'd assume they could throw in a tip repair, but idk.

Re: No Wedge, No Stick

My Kurosaki Megumi fits that pretty well. All knives can be wedgy depending on technique I think. If you don't give it a good push, even lasers can get stuck in cabbages. I've used two Kono lasers and I am surprised at how good the release is.

Re: Let's make a Gassan 210mm Gyuto

The Gassan was a knife that disappeared shortly after I got on cktg. Always liked the look. I appreciate taller 210 gyutos. I also agree with a longer 210

Re: Night of the Long Knives - Doi, Sekiso, Akebono, Takayuki

Well, I've got a honesuki, a 150mm petty, one santoku (wife), a nakiri, a 210, a 9-inch German chefs knife for tough stuff and assorted 240s. Someday I will get a sujihiki. Maybe even a 90mm parer even though I rarely use them - if just to get rid of my wife's two Wusthof parers. She uses parers al...

Re: FS Kono HD2 240

This would make a good Christmas present for someone. Good luck with the sale! My HD2 is very similar. From a newer batch, exposed machi, 237-238mm in length and 49mm @ heel. The length and heel height feel perfect together. Still feels undersized but in the “right” way. I think you’d like it Joe. ...

Re: FS Kono HD2 240

Damn it Spence...I just bought one a bit over a week ago. With a $90 handle too...Well, someone will love this one! GLWS As an aside, I didn't realize the newer ones were normal size. I was expecting 230mm...oh well. I asked you if you wanted to try it. Why'd you buy one first? You probably have th...

For those that are considering the Tojiro DP 210mm Gyuto, save some money and get this curiously similar Yahiko: https://www.chefknivestogo.com/yavgwegy21.html
 Sneaky endorsement...love it. I've been eyeing one for a while. Gift ideas as well

Re: “How much better can it be?”

Ya I've never heard that comparison either. I'm singularly speaking of "lasers" Kono is king shit in the lasers I've tried. The closest to it was the kuro laser and it was very close. If anyone thinks there's a laser better than the Kono, please send it to me before mine sells so I can side-side com...

Re: FS Kono HD2 240

Oh, I didn't mean to challenge in any way. But there is a big difference to me between 237 and 231. Neither is "better" in any sense, but I much prefer something closer to 230 because I like it shorter; others prefer it longer. I'd hope that at least some people who want an HD also want a knife tha...

Re: FS Kono HD2 240

49 mm tall at heel
237 mm from heel to tip in a straight line
So probably a true 240 along the edge

Is that different? They were the second to last batch that came to cktg. Imo it doesn't make a difference. If someone wants an hd, this is the one and only with ho/horn on cktg and forums

Try any Kono laser side by side with any knife. Then see for yourself.
Shigefusa blows any Kono laser out of the water any day of the week.
Wanna fight about it ;)
