going off the bone get something softer that can steel well.

Wow this looks like one of those "We should do a pass a round knife" I enjoyed the first one we had and just havent had any experience with ginsan. Anyone interested in a Jbart type pass a round on this one? I'm in. Well, since they're oos, we just have to find a generous owner who's willing to let...

Weight doesn't affect really.
It's about wedging, grinds, convex etc...

Which is where the Anryu excels.

Depends on the fish he’s breaking down.
Most round fish can use a gyuto for bones
Anything with hard bones will need a different technique.
