I'd pick the Harukaze, AS steel is really a great steel to have both as a professional and for home cooks.

I'm the outlyer on the forumas as I don't care for the chromax as much as others.

I’ve been using exclusively reactive knives for prep.

Toyama and Kagekiyo
No food odor or discoloring in products.
That includes 25# of onion with the Kage Saturday.
Depends on where they’re sourcing iron from as well.

I don’t think the 75mm would work better at they length you might not have enough blade to get the supreme in one pass. Do you quarter or segment the fruit before peeling / making a supreme off the rind? Do you remind the rind / peel before making suprmes? If it’s the former or the latter then you w...

I’ve done this with a double bevel honesuki and a 240 gyuto.
Your Mac Pro 6 inch should be ideal.
