idk the date but the knife was a 240mm FKH gyuto by the receipt but Mark switched it out for an FKM because I had ordered the wrong one.

I apologize for the delay in shipping this knife out, I had it all packed up and ready to go before I went on vacation and then left it on the kitchen table, sorry about that. I enjoyed using the knife and understand from George's explanation why it's so similar to knives like Masakage and Kurosaki....

I have been down the romanticized roads of cast iron and carbon steel but the truth is if you have an uneven heat source (i.e. most residential gas stoves) you will have hot/cold spots and slow response to temperature control and as the OP stated twice, at least the cast iron is heavy for flipping. ...

Same answer as for J knives, there isn't a one to rule them all. As for what you seem to be looking for I would recommend checking out All-clad MC2 and Vollrath because you don't seem to want heavy pans.

there's a guy on youtube who has sharpened knives successfully using a brick but barring that I'd recommend the red 1K brick on the website.

reading this only further baffles me as to why my Takamura R2 210 doesn't have stiction issues, I use it as my primary potato knife as no matter how wet it gets they just don't stick!
