Re: What knives are your favorites and which ones are you interested in trying or buying next?

Have a custom Takayuki Ginsan Damascus 240 gyuto arriving shortly. Taking the stainless route for a while. About to do a bit of the same myself. Maintaining a large reactive collection isn't an easy a whole lot of fun. One thing I certainly noticed since reengaging recently is the number of apex sm...

Re: BEST CARBON 210 GYUTO UNDER $600

FYI, Tosho lists the blacksmith for Konosuke's VG10 line as K. Shiraki. I guess this is where that bit got stuck in my head... You're right Joe. Those are Shiraki VG10s. The line is offered elsewhere, including local Japanese outlets, who also identify the smith as Shiraki. Chip, FYI Shiraki owns h...

Re: Worst Knife Purchase/Sale Decisions

Mine was at no fault to the maker, but the lack of research and an impulsive moment. The cleaver was a takeda and it’s radius was way too much for my cutting style. Did end up trading it for a kato nakiri which I still have and love to this day.

Re: Masakage Koishi

With the transition of the elder Kato to retirement and the son to the smith, there was something lost In translation. The first koishi under the elder was 10 times the performer than the last and final koishi I owned. I don’t remember an official announcement of the transition but I think it should...

Re: Show us your new knife!

It’s pretty easy to refinish an octagonal handle. If your having material expansion or shrinking and having a ridge problem, just resand up to a 2 or 4 k finish then buff out!

Re: Shibata Kashima

I grabbed a used one off BST for 200 smackers and I must say that I’m very pleased with it overall. I have been lacking a wa handled laser and this may be the most laserish blade I’d ever used. I never really liked the KS for several reasons, but the kashima cleared up several of the negatives for m...

Re: Konosuke Comments

At the end of the day konosuke is chasing the same smiths and sharpeners as other brands. Brand A using smith x and sharpener y at 2700 vs brand b using smith x and sharpener y at 1350. Go ahead and pay 2 x for brand A stamp! Honyakis are now all the rage, recently the choices have tripled in what’s...

Re: Konosuke Comments

Just a year ago, maybe a year and half, one could buy a kono 240 blue 2 Honyaki, a kato 240 Damascus and a kato 210 Damascus for 2700 bucks. All handleless of course. Dang that was a good deal considering prices today  ! Matty, I would have never thought that things would be the way the...

Re: Konosuke Comments

Chip, I agree that kono with limited release probably will sell these as there will always be those with more money than they know what to do with. But konos Honyakis were last made by Shiraki and so was the Tesshu that I bought. The kono was 1200 and the Tesshu was 600 and change. The kono was a li...
