My wife and I are medical so we aren’t part of the “shelter-in-place” mandate, but I have noticed that we have been using a corkscrew a lot more often nowadays.

Agreed. Cleavers I have/have used usually have a heel height that’s around half the length of the edge (i.e. 240x115, 220x110, 200x100, etc).

I just got my Takeda Classic 240 back from @Jobone the other day, and I’m totally smitten. We kept the design on the simpler side of things, and I think that it really complements the blade perfectly. In an effort to "save time" I used the ubiquitous little harbor freight belt sander to knock off the initial bevels, then the rest by hand. Really not hard at all. The sandpapers I used were grits 80 on up to 1500, then on to fine micro mesh pads to buff the buffalo horn. For the wooden part of the...

I knew I forgot something 🤦🏻‍♂️ For reference, the tang is 6.6mm at the handle, 6.1mm over the heel, 4.0mm halfway, and 1.5mm at 1” from the tip. It’s a really good example of how a beefy grind should be done.
