Re: Show us your new knife!

Been trying to slow down on new purchases, but I finally broke and got my first knife in 2020: a Konosuke 180mm ginsan wide bevel nakiri. Been after this one for a while so it was pretty easy to break my resolution. https://i.imgur.com/faevJyD.jpg https://i.imgur.com/RbdkKIR.jpg https://i.imgur.com/...

Knife arrived today, all in good order and it is stunning !
George, could you post a few photos? I’m curious to see how the cladding has held up in terms of patina over time.

Misono Dragon 300mm Sujihiki - SOLD!

And the purge continues. I bought this Misono dragon 300mm suji from JCK with the intent of using it over the holidays, but that never happened. The knife is BNIB. Paid $240. Asking $200 all in (shipped & insured) ConUS. Add $15 for international buyers. Edge length: 304mm Height @ heel: 41mm Weight...

WTS: CII Bladeworks Diff Hardened 240mm Western

Sadly, it’s time to whittle down the collection so I’m reluctantly putting up my Carter Hopkins differentially hardened W2 western handled gyuto. The handle is made from gaboon ebony, brass snakeskin carbon fiber from FatCarbon, brass & black G10 spacer, and brass pins. The saya is made from a nice ...

Re: Polishing, Kasumi Finish & Etching

This pair has been a great combo in the kitchen: Raquin 270 KT and 80mm kogatana. They get a lot of use, especially this past week so I decided to give them a post-Christmas spa treatment.

Re: Roo strops and California

Wow, I had no idea. A member here gifted me a nice roo strop, and now I’m considering reporting him to the authorities 😂 Time to practice my google-fu

Edit: A quick search shows that the ban was lifted in 2007 so I guess I don’t need to report Sean anymore.

Wow, wondering how you got the cases back to the us?
Some of the vineyards in CdP will ship internationally. All the ones we went to did, but there were others in Cornas and Crozes Hermitage that didn’t have any international shipping contracts would we had to stuff them in our luggage.

Re: Polishing, Kasumi Finish & Etching

Nicely done Steve. I hope you enjoyed the wine as much as I have. One of my favorite 😀 Thanks for the compliments, and I definitely enjoyed the wine. My wife and I celebrated our 10yr anniversary in France a couple months ago, and we spent a day in Chateauneuf-du-Pape. Bought a few cases, and I thi...

Re: Polishing, Kasumi Finish & Etching

I got a bit burnt out with polishing so I took a break for a few months to get refreshed. I’m slowly getting back into the groove and remembering how much I enjoy the process. First up is Sean’s (nakneker) Konosuke #6 cleaver. He bought it used and wanted to get it back into tip-tip shape so I clean...

Re: Rabbit hole? Nah

Nice score! I have two Tsushima's that produce (white) mud quite readily using a tomonagura. Even when I don't use the nagura, the stones cut fast and produce nice finishes for most knives. https://i.imgur.com/8EttRaI.jpg I got a Tsushima recently, and I love the thing. I’m still learning its intri...

Re: Black Lotus and others

My views are pretty much in line with what the others have already said. All of us obviously have an appreciation for the skilled Japanese makers, but my dealings with western makers has really caused me to have an elevated level of respect for these types of craftsmen. Western makers typically do e...

Re: Show us your new knife!

This one if just getting wrapped up. My second Black Lotus, 255x56 with mid weight grind, spaghetti oak handle. My first BL was such a joy to use I ordered a second. Jeff Steele collaborated with friends of mine and they came up with the idea for this knife together. Then Jeff did his thing and del...

Re: Rabbit hole? Nah

So which ones are for sale? 😂

Today I used the Tsushima I got from you, and it’s a killer stone! Compared to the more popular stones, they seem to fly under the radar.
