Hi Kevin! I have many Ganzos, they all have great quality. I think rerally there are many cheaps and low quality knives in China, but I recommend you to try Ganzo. Nice snag! Sakai usually measures from machi to tip so I suspect that they would consider this a 270.

Ethan, I think just about every yo shig kitaeji I've seen has some sort of curly something wood for the handle. It's like an unspoken rule or something. I say break the rule. Buck the system. And speaking of buck, find some beautiful buckeye burl. That would compliment the pattern of the blade nice...

In terms of feel, the iromono and tomae were probably my favorites. There’s a bit of overlap between the two, but I would say the that tomae is a tad harder and finer. I've taken a more pragmatic or simplistic approach and have been using a French Press for years. I did go out and buy a Frother (Breville - I keep gravitating towards that brand). I like it but don't use it often enough. A flawless product. I'm sure I could make a better pour over or cup of coffee ...
