Corned beef and cabbage. I sous vide the beef, then pressure cooked the cabbage (and other veg) in the beef juices once it was done cooking. Delicious.

I bought a Mazaki K-tip on a whim and am really impressed with the flat profile and tall S-grind (it's convex up to the shinogi line, then it turns concave). Being a K-tip, it was outside my comfort zone, but it took me exactly one prep session to fall in love with it.
