I've never had any luck with flaxseed oil, either. Lard and vegetable oil are my standards. But the real secret is just to keep cooking with it.

I thought I was done buying 210s. Then I found this Tatsuo Ikeda that his son had just found and offered for sale. The Hamon sealed the deal and I pulled the trigger. This is a Matfer with about 7-10 uses after several attempts at seasoning. Fried some shroom slices with a drizzle of lemon juice tonite, the seasoning layers seemed to get lighter, but then 20 oz of smoked bacon. Typically they come in between 45-50mm). Bottom line, though: any knife you get from CKTG is going to blow that Cost...

You're right, it's Takefu V2. In my opinion, it's a top shelf steel, maybe my favorite.

It's carbon cladded, but not overly reactive (especially with the KU).
