I like to make this for quick weekday meals partly because it seems to taste even better as a leftover.

I went ahead and jumped on the custom Shibata R2 185mm Bunka on CKTG, hopefully shibata has a put a good OOTB edge on it. I was able to find that Ikeda San forges these for shibata. And for stainless, I don't really bother scrubbing off the burned bits on the reg, and occasionally nuke it with BKF.
