Damon, the Masamoto VG is the most robust of those three, while the Takamura is the thinnest blade with harder steel. It's been a while, but I did some side by side testing with both 240 versions as I own the Shizuku 240 Gyuto. The Hammered version was slightly thinner and a little lighter and maybe edged mine just a tad in performance. To be honest, I like the Rosewood handles on the Shizuku better, but who knows ...

Yes, the Takayuki that Julito recommends is also a very good knife. I had my friend buy one a couple of years ago and he's done very well with it. It's a good looking, good performing knife, but double the price of the Masutani. The steel is a little nicer and it does have more length, which is nice...

I would also recommend the 140 for flattening. The 400/1000 plate is better used as a course/medium sharpening stone or for stone surface cleaning/dressing using the 400 side.

I've been getting it regularly as well. I checked the management tools with the hosting provider and didn't see any specific web server error logs to review. I'll see if Mark can start a ticket with them.

Dan, one advantage of a Santoku or Bunka is that they are less expensive than their comparable 210 Gyuto counterparts, meaning you can often get a bit nicer knife, especially at your $100 budget.
