The Damascus series of this line is amazing. I have the 240 and it's my most used knife still, even after removing myself form kitchen work full time.

Start them medium until they start to sweat, once that happens drop the heat and let them roll as low as you can. we did this every week with 100+ pounds for french onion soup. Get this one. It's steel, shape and length can also double for small board work as well, think shallots, garlic etc...
Great on trimming up beef cuts as well like silver skin, pretty good on venison.
