Shapton Glass 500 Xtra Thick Shapton Pro 2k. You will be hard pressed to find anything these two in combo don't handle. For kitchen work most edges above 2k die quickly, but this stone will handle in-between touch ups just fine as a light stropping. You can budget in a flattening plate later on when...

Buy quality if you can. Especially ranges and ovens they will be the backbone.
