Tried the Kotetsu R-2 Battleship 195mm on sweet potatoes yesterday and it worked great. Low wedging and no cracking when halving them and cutting into batonnets for oven roasted "fries".

I would jump on the Koishi 210 Gyuto. That's a great price for a great knife. They do tend to be thin at the edge, but if you don't have chipping issues with your current J-knives I think you would be fine using a Koishi. Just pay extra attention to what the blade is telling you when getting to know...

As Cutuu mentioned, the difference between those two is the core steel. They have similar dimensions and performance. The price difference is likely the cost of the steel and/or cost differences when Mark placed the orders.

@ Paul, there aren't that many Hammered (Tsuchime) knives on the site. As does Nick, I also think the Anryu has a very nice Hammered finish. What about the Masakage Koishi or Saji R-2 Wa Hammered? The videos should give you a pretty good look at the Kurosaki R-2 Wa dimples.
