Re: Shibata Kashima
Tried the Kotetsu R-2 Battleship 195mm on sweet potatoes yesterday and it worked great. Low wedging and no cracking when halving them and cutting into batonnets for oven roasted "fries".

Re: Talk me down from the (l)edge - Masakage Koishi
I would jump on the Koishi 210 Gyuto. That's a great price for a great knife. They do tend to be thin at the edge, but if you don't have chipping issues with your current J-knives I think you would be fine using a Koishi. Just pay extra attention to what the blade is telling you when getting to know...

Re: What is the best Sujihiki for me?
As Cutuu mentioned, the difference between those two is the core steel. They have similar dimensions and performance. The price difference is likely the cost of the steel and/or cost differences when Mark placed the orders.

Feedback on Arashiyama 1K Stone
I have one of these in-house for a video and played with it a little this afternoon. Can anyone contribute their feedback/opinions on this stone? Speed, hardness, feedback, how it worked on different steels, etc. I was surprised how splash and go this stone was right out of the gate. I first gave it...

Re: newbie home cooking recommendation
@Goran, I think the Misuzu Bunka would be a great knife for learning to sharpen. The steel is good and it's a very fun & versatile little knife. The flat edge profile will help when you're learning to sharpen. You can concentrate more on holding a steady angle to build muscle memory without worr...

Re: Gyuto or bunka
The Shibata 195mm Battleship knife that I have here for video is 45.4mm tall at the heel. It's a full on laser through the products I've tested thus far. Specs on the 195mm Shibata Kotetsu: Weight: 127gr/4.5 oz Edge: 188mm OAL: 330 Spine: 1.8mm Height: 45.4mm Like the other Kotetsu R-2 knives, it's ...

Re: Hammered finished knives
@ Paul, there aren't that many Hammered (Tsuchime) knives on the site. As does Nick, I also think the Anryu has a very nice Hammered finish. What about the Masakage Koishi or Saji R-2 Wa Hammered? The videos should give you a pretty good look at the Kurosaki R-2 Wa dimples.

Gareth, do you have a Goko W#1 knife? If not, the Goko 150 Petty is pretty sweet.

Mark did carry a few from Takeda. They were very nice...and pricey. Search my YT channel to find the videos.

Re: Paring knife needed
I own the Tojiro DP 90mm paring and the Shun Classic 3.5". I've also tried a number of CKTG offerings. The MAC Pro 3.25", Tojiro 90mm and Shun Classic are some of the most ergonomic in my opinion. Check out the QL videos on those product pages where I usually compare 3-4 different paring k...

Re: 2 Knives
The Saji Ginsan knives are excellent. They're good performers with nice F&F. Ginsan is easy to sharpen and takes a very nice edge. Unless you have a quality sharpening service available that understands how to properly sharpen J-Knives, I would highly recommend that you learn to sharpen. It's re...

Re: Help Me Decide on a Knife for a Passaround
That Sukenari was really a head scratcher. A number of us often recommended that Ginsan 240 in particular and we even started referring to it as a "Goldilocks" knife...just right in many respects. CKTG customers didn't buy them despite the recommendations as Mark dropped that line because ...

Re: Looking for a short 210 gyuto
Robert, the Hinoura Tamashii W#2 210 Gyuto came immediately to mind: http://www.chefknivestogo.com/hitagy21.html. The one I tested was light, thin and nimble and a great performer. I don't know when they might re-stock, ask Mark via email. What about the Konosuke Keiai T1 210 Gyuto http://www.chefkn...

@benslammin - what specific R-2 knives do you have right now?
What are you looking for that's different from your current knives?
