Re: On the hunt for a green onion slayer
I’m looking for a blade that will not require stone sharpening as much as my current go-to for green onions...I prefer japanese handles but I value functionality above everything. Gyuotos, santoku, kiritsukes, and nakiris are all welcome, I just need something that will mow through wet herbs with e...

Re: Thinning - Heiji
I have two Heiji knives: one a 210mm Sujihiki in semi-stainless and a 240mm iron-clad carbon. I have thought about thinning both of them but chose not to. Heiji knives are similar to Shigefusa in that they are on the thick side and wedge in dense product but the shoulders are steep and cut so well a...

Will do Sam. Should arrive just ahead of the Christmas holidays so hopefully will find some time to give it a good test. I have at least 3 knives that would benefit from some thinning!! --- Yes, give us an honest review. Wonder if it is like the Nub150: fast cutting but very thirsty and prone to di...

Good advice given above. I have many knives in AS from Moritaka, Hinoura and Kurosaki and have had no issues with chipping. Re: The Care of a Hinoki wood cutting board.
I honestly don't know what the benefit of oiling boards is exactly in the first place. I know that as a finish, unless it is a curing oil, oil finishes do very little to prevent water from being absorbed into wood, but maybe it does slow the process down, I'm not exactly sure. Whatever the benefits...

Re: The Care of a Hinoki wood cutting board.
I have had mine for a number of years and have never oiled it. I only use it for fruits and vegetables. Simply dampen it, use and wash with a little dish soap.
