Brisket & Russets! I bought some Badlands slow smoked brisket (hickory & apple woods) topped with Habanero bbq sauce, I roasted some Russet potatoes and steamed spinach with garlic and Ume Plum Vinegar. Quite delicious!

Good advice given above. I have many knives in AS from Moritaka, Hinoura and Kurosaki and have had no issues with chipping. I honestly don't know what the benefit of oiling boards is exactly in the first place. I know that as a finish, unless it is a curing oil, oil finishes do very little to prevent water from being absorbed into wood, but maybe it does slow the process down, I'm not exactly sure. Whatever the benefits...

I have had mine for a number of years and have never oiled it. I only use it for fruits and vegetables. Simply dampen it, use and wash with a little dish soap.
