Re: Tokyo fishmongers face crisis as vast market stands idle
Interesting how their paywall works. I found the article as suggested read on my facebook newsfeed and I can read it for free. If I try to open the link I posted it asks me to pay (I have no subscription with FT and not planning on getting one. To sum it up: a new market (80% larger than the current...

Re: Leveraging our inventory system
I think it is really important to keep all items visible. Even if something is out of stock it is very helpful to be able compare different lines/makers/items and then have the ability to sign up for a notification. Totally agree on that! I would not have bought 80% of my lineup if I could not see ...

Re: Nakiri & Gyuto
All of your creations look awesome! I like your designs and love pure iron knives. Have you measured the hardness of the core steel? 62-64 HRC?
What is your current waiting time for a custom order?
It would be great to have a passaround blade for the forum if possible!

If I get the other 250mm W2 and she finds out, can I move in to your shed? I can cook! And will bring my other knives to play too!

Re: Farewell prison knife. Hello CKTG practice knife.
I think I would have to have had a guaranteed deal in writing from him before buying a thousand of them! I seem to recall the word "stupid" directed at me by my business partner more than once over the past few years when this knife was discussed. Behind every good man there is a good wom...

Re: Masakage Shimo 240 vs. Tanaka Sekiso 240
Do not let BKF slurry sit on the Shimo for more than 20 seconds... Ask me how I know.... If you do, a wet (lots of water) piece of 2,000 grit 3M sandpaper (e.g. home depot) and 30 seconds of light scrubbing will remove 99% of the etching. Always a great idea to neutralize the oxalic acid of BKF (eve...

Peach and greek yogurt cake
Last weekend's fun activity with the 2.5 year old to celebrate the 4-hour sleep of the 1-month old .... :) Vanilla and lemon zest cake, peach compote, (2 lbs of strained greek yogurt + 1 cup of confectioners' sugar), chopped walnuts. Simple and refreshing :) http://i1318.photobucket.com/albums/t652/...

Re: Blackstone Knife Company 250mm gyuto
Excellent review Ryan, thank you for taking the time!!!! Tim, the heel is mainly used to destroy my wife's kitchen towels so she can get upset, find an excuse and go on a shopping spree on Amazon.... My (back then pregnant) wife drove the tip of the knife into the base of our coffee machine (lucky t...

Re: Knife Brands I've Discontinued
Kurodori ginsan,
Looked like they had great grinds, iirc only nakiris and 210s were offered, i am pretty sure i would have bought a 240 if available.
Still remember you mentioned that the guy was too shy to let you use a photo of him just the logo and the photo with the farm tools and knives
