Re: Your Preferred Two Knives Combo

Are you saying your two knives would both be 240 gyuto? my apologies ~ I wasn't trying to confuse the issue. Just to clarify, I have probably 25+ JK's (whose counting right?) and generally have five Japanese knives in my rotation at any one time. Generally a couple of 240 gyutos, a 210 gyuto, a bun...

Re: Your Knife That Outperforms Its Price

This might be cheating a bit!! I bought this "Harukaze AS Gyuto 240mm - Returned" for USD125 as a spur of the moment thing, not quite knowing what I was getting. When it arrived, I couldn't see any real reason why someone would have returned it. Gave it a bit of a once-over and put my own ...

Re: Picking Between Konosuke HD and Shibata Kashima

I'm an engineer and built my own basic jigs in the early / mid 1990's. Then I found & bought an EdgePro Apex in the late '90's and learnt the basics of getting a knife sharp. That was improved hugely when I found Chef Knives to Go Forum in 2013 and the wealth of knowledge & experience here. ...

The knife that immediately comes to mind for me as a "one knife to do it all" has been mentioned above and it's the; Shibata Koutetsu R-2 Bunka 185mm here https://www.chefknivestogo.com/shkobu17.html Grinds to die for, great heat treatment, robust, superb blade road & edge grinds, and ...

Each of us has to walk our own path to get the most "joy" from our addiction. For me, at least half the joy is from sharpening, even though it cab be really frustrating at times .................

Re: Yahiko Ginsan Nashiji Hand Engraved Kiritsuke 240mm

I have looked at the Harukaze gyuto in the past. While I like several things about it, I far prefer a flat profile and for sure do not like what I call 'back belly,' which the one in the photo on the product and the one used in the video review both have. Hi Carol, I'm sure you have already seen th...

Re: Picking Between Konosuke HD and Shibata Kashima

Initially I was a bit "cautious" about the way I handled my Shibata, but now I just treat it with the same respect as any of my other lasers.... I've been hesitant in using the knives I've acquired because most are rustic hand-made that I saw as too nice to use until I eased into it. But ...

Re: Yahiko Ginsan Nashiji Hand Engraved Kiritsuke 240mm

I am curious, how is the tip for the initial horizontal cut on onions? (after halving and laying the inside of the onion down flat). I have been looking for a Ginsan knife for a long time, and this one looks like a possibility!! Thx! Hi Caerolle. I do like ginsan as a steel, easy to sharpen, takes ...

Re: Yahiko Ginsan Nashiji Hand Engraved Kiritsuke 240mm

OK, just a bit of an update. As above, I have this knife in my current rotation and have added my Harukaze G3 Nashiji Gyuto 240mm, here https://www.chefknivestogo.com/harukaze240.html as a running comparison. To all intents & purposes (apart from the "K" tip on the Yahiko) these are VE...

Initially I was a bit "cautious" about the way I handled my Shibata, but now I just treat it with the same respect as any of my other lasers. Taz is right thought about the blade grinds being crazy thin and they can make a bit of a "ping" if your technique is a bit off, just to k...

Re: Picking Between Konosuke HD and Shibata Kashima

I have the 240 ginsan version of the Kono and it's a fantastic piece of kit. I also have the 240 Shibata and if I had to choose only one, it would be the Shibata without doubt. It's just one of those knives. I call mine the "Baby Faced Assassin". There have been screeds written on this for...

Re: Yahiko Ginsan Nashiji Hand Engraved Kiritsuke 240mm

Nice knife, I own the 210mm Kiritsuke and the 65mm Santoku they are both awesome all around knifes, the looks, profile and how the steel sharpens and holds up to daily use exceeds expectation! We use the Santoku daily and after 1 year of hard use on a white cutting board I finally had to drop down ...

Re: Yahiko Ginsan Nashiji Hand Engraved Kiritsuke 240mm

You can try using some silicon carbide grit powder (500 grit probably?), mix it with mineral oil, put it on some 600 grit SIC sandpaper backed by a piece of leather or 1-2mm craft foam and use it as a finger stone to get into the low spots and even out the finish. Or use some of the stone mud with ...

Yahiko Ginsan Nashiji Hand Engraved Kiritsuke 240mm

I received the above knife for Christmas a year or so back. It was my first Kiritsuke, which I had a bit of a play with over the 2022 festive season. It pushed a lot of buttons for me. It has a hammered ginsan blade with a much flatter profile than my gyutos, a nice nashiji and kasumi finish. Being ...
