Re: Happy Thanksgiving!

Happy Thanksgiving to all! 13 pound smoked turkey from Burger's Smokehouse in Missouri. 10199.jpeg I’m willing to bet a beer that the gyuto is a Kurosaki (Senko?) but tell me about that cleaver. Yes, the gyuto is a Kurosaki Senko SG2. The cleaver is a Misono No. 61 AUS-8. is that the infamous "...

Re: Baking Much?

For no reasons other than it looked good and seemed do-able, I decided to give Claire Saffitz's Pecan Slab Pie a try. It looks great and smells great but as of now, unfortunately, I have no idea how it is. Only made 1 and can't cut into it until our big meal tomorrow but the anticipation is killing...

Re: Favorite Cooking/Kitchen Related Web Sites

Back in the day (15 or more years ago) I really enjoyed watching cooking shows on Saturday morning! Besides PBS there was the Food Chanel (which is still there) and maybe one other channel that actually had cooking shows on. We had the likes of Martha Stewart both cooking and baking shows, Bobby Fla...

Re: What did you cook today?

I'm gonna have to get a picture of it next time we make it, my family made one of our favorites yesterday and had left overs today. It is a grilled teriyaki and pineapple marinaded chicken that has been sliced in thin halves, yellow Indian style rice, and a vegetable mix that is also marinated, a c...

If you are itching to try a Usuba like I was, this might be worth a look: https://www.chefknivestogoforums.com/viewtopic.php?p=150826#p150826 I got two and kept the ginsan version. These are thicker than my regular gyutos I guess to make the Ura easier to do? or maybe its how they are. My yanagi has...

876-5309.  I think its 867-5309 And a zirh. I wanna zirh for no really good reason. It looks like a veg cleaver that’s been looking at all the wrong websites. I had one of those Swedish rounded two handed rockers in the old days and remember it removing a small portion of my finger!...

Re: Baking Much?

I bought the original inventors book of the no knead bread craze, "My Bread" by Jim Lahey to give a try. It sure was easy but I found a few "folds" helped the bread get a better rise. Here is my 2nd attempt at "no knead". Not bad for 5 minutes of work!

Re: Recommend a nakiri (custom or something fun)

For pure performance, in a 165mm nakiri, I would highly recommend the Shiro Kamo R2. It’s light and has a very nice thin grind and the performance is truly superb. It would be a great knife to dip your toes in to Nakiri’s. https://www.chefknivestogo.com/shkar2na16.html Art did you have one of these...

Getting cooler finally so I made some rye and some orange/cranberry soda bread. ATK no knead bread with a few embellishments like rye seasoning and caraway seeds. Second rise just didn't have the oomph wanted but the taste is there.

Been making a pizza every Saturday for 3 weeks now for my wifes crew at work, and some for home usage this time: Work pie; this is a cast iron pie put enlarged and put into a rectangle. No Dates on Customer Reviews anymore!

When I look at Yelp restaurant reviews, I always sort it by "most recent" I don't care what happened last year or 2 yrs ago. And for knives I believe they evolve and want to see the most recent stuff also but... Sadly the dates are missing for CKTG customer reviews! ! Knife quality and att...

Re: Recommend a nakiri (custom or something fun)

With over a hundred choices here, do you want looks or performance? High end knives don't usually come with D handles except my top of the line Toyama did. When I first asked the same question you are asking years ago, Jeff B said the Murray Carter was the best Nakiri. I ended up with a Takeda but i...
