The cleavers look like they are finished like last time, very nice! I’m glad I didn’t have to try and fight it out today. Looks like it was brutal.

Re: Show us your knife collection.
I’ve manage to collect about 30 knives in quite a short time. I don’t have a particular strategy apart from diversifying into as many different types and knife makers as possible. But one thing I notice here is that most people seem to have a proportionally larger number of Gyutos in their collecti...

You guys are so generous! An example of how being charitable does have real world impact. My wife was diagnosed with breast cancer a few days after Christmas in 2016. It was a very aggressive cancer and in the past this was the most fatal form of breast cancer women suffered from. But because of ta...

Re: Show us your new knife!
Used it for two meals at home today and it's definitely a keeper. Separation ability beyond my expectation given how much taper and thinness it has at the right areas. The sakais twin. blue 1 and blue 2. https://i.imgur.com/Z2grqO5l.jpg Duuude, that patina though! Blue steels always make the most b...

Been in knife jail (SO) for the past year, so this was unexpected He lost his wife in late July when I was in Arizona, had talked to him the day after. If anyone has contact info for his survi...

Looove this idea!! Here is my 2 cents. Please add some nice distal taper to the package. A thicker workhorse style heel with nice distal taper to a thin tip would be something different and an awesome Kaiju 2.

Re: Any requests for a new Togatta?
Doi and Yoshikane would be nice. Doi one with 51/53mm height, will make a nice geometry for the profile. Yoshikane also works with their amazing grind and heat treat. my other suggestion is Shigeki Tanaka, he makes a really nice gyuto and good Heat treatment for that price. So why not try with KS p...

One thing to consider when reading that review @jmcnelly posted is that toyamas have seemed to slim down sone since then. And most of the new ones are stainless clad. Still a great read.
