Think about the AS version and the HAP40 model as well. Have both and the HAP40 takes a bit longer to sharpen, but I really like my AS knives from all makers - sharpens like other blue steel and holds the edge longer. My better half (left handed she is) has taken my Richmond laser AS Honesuki knife over. Did a 90/10 grind on it and she's happy. I might need one of the Chris knives to replace it.

An orange pan is one you toss on the coals and go look at mushrooms for a bit while its heating up. My little camp pan has been well over 1500 degrees on many occasions - just toss some butter in it when cool and then your morning eggs. I love campfires

I've got a half dozen of the Damascus Kikuichi blades - love them. My gold standard for blades - even the nenohi stuff does not cut with them. And my collection of old Kikuichi stuff (swords included) will continue to grow.

Bright Orange is about 2K - why coals are a great thing for seasoning. No oil survives at that temp - pour on what cha want as the pan cools and it will be fine. My camping pans are the best nonstick stuff ever invented - old carbon steel stuff that will never fail - just use them and be happy

Ben - you should not use soap if possible. Oils are not stabile in soaps of all kinds. I did a bit of tribology years ago when building mechanical gyroscopes - learned more than I ever wanted about oils and still us it in cars and bikes (chains are the worst). There are no oils that are invulnerable...

I'm in/on the waiting list for a Fujiyama 240 - my first kono (HD2 240) has only cut a few things, but the knife is a testament to why they are held in such high regard.

I have a bunch of MACs - great knives for the money. I gave the santoku to my sister and she still uses it. Almost a must have entry into the rabbit hole knife

Boker stuff seems to bring money, but most others are only cheap - I have my grampa's swiss razor - never use it (Gillette double blade with father blades is my choice) - seems to be a weird market with brand the important thing. I get a great shave with my dads stuff
