Lodge is the simple and cheapest choice. We love our pair. If you are looking for a carbon steel the WJT is a beauty but way more expensive. I find myself using the Lodges when I want a very hot pan for heavy searing. My carbon steel pans, WJT, Mineral B etc. are for more normal use. My brother and ...

My pleasure mate. Yes it is super peaceful here. Especially coming from Maui which was getting to be everything but peaceful. I guess many people would not like the solitude, but for us its a blessing.

I would go with a deba too. Certainly if you are going through anything but the smallest spine. That Takayuki is a sweetheart but OOS. I think you may have to up your budget. I can understand the frustration but.......there is no perfect way for Mark to sell these rare knives while being fair to all who would like one. Other companies have tried timed releases, sign ups, lotteries, you name it. They all have problems and someone always feels like they got the short straw...

The fresh produce, fish and meats are quite amazing here so cooking is an absolute joy. Aside from the fact that my knives are still sitting in a container in Panama City!!! Probably... I am certainly cooking up a storm here. The produce is so damn good. Cant remember when we tasted such wonderful fruits and vegetables. The end of the country where we live is the bread basket of Panama. Also our small village is one of the best fishing spots in the Pacific!!! Cant wait ...

Thanks Steve! Yes it is not for the faint of heart...but we are excited for sure. Have dreamed of this all my life so time to get going!!!! We were so fortunate. The land is very special with some incredible views of the ocean, bays and islands as well as huge panoramas of the highlands and volcanos...
