Re: 8K Stone Investment

While I respect Ken's opinion I stop after my 6K Nubatama Platinum which is a fabulous stone. I do as well for the most part, but Ken set me up with a 15K Nubatama and I used it on a single bevel knife a few weeks ago - OMG silence through newspaper. I am a solid believer in the Nubatama stones - a...

Re: looking for a santoku or nakiri

If you can wait a bit, I'd consider this one as well. https://www.chefknivestogo.com/tachsa17wtbo.html My brother has a gyuto from the same line (his first J knife), and I no longer bring a knife roll to his house when he does dinners. He always had very dull knives (Wusthof stuff that he had sharpe...

Re: Cooking to fend off winter.

Do you go to AZ every winter? If the business wasn't chaining us down I would totally be a snowbird and spend winters somewhere else. Here is what I made last night. Nothing like a good pot roast. https://i.imgur.com/y4XafGD.jpg just going to visit daughter and maybe some folk from another site - m...

Re: Cooking to fend off winter.

It's still a balmy 16 below here (was -18 earlier), and we are going to have a "high" of 6 below in Minneapolis, looks like a good day to make some lasagna - off to start the sauce so I can serve dinner at 7pm. Phoenix is calling - going to be there later this week.

Get a good loupe and be done with it https://www.chefknivestogo.com/20xloupe.html digital cameras (especially phone based ones) have very low OTF. First is Nyquist as Ken mentions above, and second is they are done in Bayer mode (a checkerboard where all the lack squares are covered with green filte...

Re: weird symbol on a knife blade

Kikuichi uses a chrysanthemum, they are one of the oldest knife and sword makers in existence. The chrysanthemum is the old mark of the emperor - no other maker uses it, or has ever been allowed to use it that I know of. The blade in question is not a Kikuichi. Kikuichi means "first chrysanthem...

Re: How much does the steel matter

A white steel Tojiro Shirogami knife is probably going to be sharper and hold it's edge longer than anything most home cooks have ever used. Testify! As a lot of you know....I'm a newbs newb here. My first J-knife was purchased New Year's Day this year...a Tojiro 150mm Petty W#2. The very first tim...

Re: Comparison between sharpeners

I bought a Lansky system many years ago, but went back to whetstones - my gauge was how many deer I could gut and how easy it was to do it. I could put a better edge on a Buck 119 with whetstones than a Lansky system back then. A guy I work with has an edge pro, and my pocket knife is sharper than h...

Re: How much does the steel matter

I think many of us fail to recognize the needs of a home cook versus those of us who cut up 3 boxes of onions to start the morning. My brother has one of these https://www.chefknivestogo.com/tachgy21.html Takamura Chromax knife his wife bought him for Christmas a couple years ago, and they use it ne...

Re: Knife recommendation for a friend

Have both HD2 and GS+ Kono's - the grind on the HD2 is much more to my liking - have the GS+ out for a bit of grind change. But either one would be a great home knife - and probably the last one you NEED to buy. But it may also lead you down the rabbit hole with the rest of us. The handle on the ho...

My guess is they did not last long enough to be posted for sale. You need to put in for the chance to get them right now

Re: 210mm Gyuto wanted.

Third the Anryu - and you need to get your email in to get one - and the last batch sold out within an hour. I’m quite pleased with mine - it still hides most of the time - I prefer bigger knives - but that or the Kurosaki should ring your bell quite well.
