Re: Shapton Holder - Would you buy it again?
Hi. While I can only speak to the field holder and not the heavy holder, In regards to sharpening with the stones still inside the field holder, the field holder does not lock the stones in place and the opening is on the bottom. So if you were to use it with the stones inside, it would basically be...

I’m no konosuke expert but a quick search seems to suggest the SS for semi stainless.

Re: Sharpening CHEAP Knives
M I tend to disagree with folks who say it isn't worth getting a good edge on cheap steel. Cheap steel around here tends to mean anything not Japanese and in my case all I have is "cheap" steel. Some Chicago Cutlery, Cutco, Mercer Milennia, so a good edge is always needed. . I think in thi...

Re: We bought an induction range.
Looks good Mr. Mark! Did Sue like it? Yes it was a fun night. Even though we go to work on Saturdays, Friday night is always a good night because it’s the weekend. Last night was a pizza party while watching this show called Mythic Quest and then some guitar playing. :) Hey Mark, the pizza and oven...

Re: Trying to get from adequate to great
Hi, welcome to the forum. Disclaimer: I'm not a pro but I'm not a rookie either, so I'll start by saying listen to the sharpening pro's before listening to me. It's been a while since I've watched any videos and if anything I recommend goes counter to something you see or hear from someone like a Pe...

Re: New Knives Needed - Upgrades
I could be wrong, but the only one that I saw that has both petty and gyuto for a matching set, that is in stock, is the Kurosaki Senko.

Crispy edges all day long for me. But not in iron. I like to start on high heat them med-low for the remainder.

Re: 80 coats, Cast iron
Wow STPepper9 well done buddy - you have some amazing patience and aptitude. I was going to throw a really old full metal carbon steel 12" frying pan away but I sort of rescued it a bit now - haha! It was rusty in the middle down to the bare metal and had patchy flaky teflon on it so I hand sa...

Re: Knife for Brother
Since he is willing to spent as much as he is and he can't sharpen I'd leave the VG10 stuff on the shelf for now. Not that it's a bad steel but I'd be looking at knives with much better edge retention like R2, HAP40, SKD or AS for a carbon. That Kurosaki linked is badass. This would be an excellent...

Re: Sharpening CHEAP Knives
I think using the bottom of ceramic plates and mugs is more common than we're aware. I've seen it done in every restaurant I've worked in.

Re: Sharpening CHEAP Knives
As you said, the steel is weak and dulls fast so I think the best you can do is expect to sharpen more often. For that reason when you do sharpen it's probably not worth it to spend a lot of time perfecting your edge. I use a shapton glass 500 and /or a king 1000 on my kiwis at work, I'm probably do...
