Crispy edges all day long for me. But not in iron. I like to start on high heat them med-low for the remainder.

Since he is willing to spent as much as he is and he can't sharpen I'd leave the VG10 stuff on the shelf for now. I think using the bottom of ceramic plates and mugs is more common than we're aware. I've seen it done in every restaurant I've worked in.

As you said, the steel is weak and dulls fast so I think the best you can do is expect to sharpen more often. For that reason when you do sharpen it's probably not worth it to spend a lot of time perfecting your edge. I use a shapton glass 500 and /or a king 1000 on my kiwis at work, I'm probably do...
