Re: Advice on Wa Handle Change and Choil Modification

I can understand your disappointment in the handle but at the same time I like the oversized handle. I own the 165mm Gihei Blue #2 petty and find the oversized handle more comfortable than the, what I see as, undersized handles that usually come on a petty. Basically that handle isn't a +/- it's ju...

Hi Ben,

I think you would love this knife. Konosuke HD2 Gyuto 240mm Ebony

It’s at the high end of your range but it checks all on your list.

Re: MV Steel?

I have two MV steel petties in my knob be block that anyone can use. My wife and daughter are very hard on knives but these can take a beating and keep on cutting. Don’t expect them to stay as sharp as long as better steel but very happy with them.

Re: A "Japanese-looking" knife with Aogami Super

I like the looks of this one. https://www.chefknivestogo.com/ensrki21.html Pure Japanese ☺️. But then most of the knives in here scream Japanese knives. What steel does srk8 at HRC 63 act like? It’s a great steel. Doesn’t patena a lot. It sharpens easily with the shapton pro stones I use. It holds ...

There’s a phrase in life…is the juice worth the squeeze?? Well if you have the time time a wood smoker is the way to go, but who has the time to constantly check the temperature, keep adding more wood, and so on. Completely agree that’s why I have a gas grill, a charcoal grill and a charcoal smoker...

Vacuum sealer needed

It works for awhile and then trey full light comes on and after cleaning doesn’t work properly again. This is the second unit that does this. So in the market for a unit that’s more d...
