If you like the Tsunehisa AS Sakura don't be afraid of the AS steel, it's a good knife for the money. Yes AS is carbon but it is an alloyed carbon making it act more semi-stainless. It should be washed and dried when done using but it won't hurt it to sit dirty for awhile. It would really have to b...

You don't need diamonds to sharpen Hap40. Any quality sharpening stones can handle the job you just have to expect to spend a few extra minutes getting it done.
