Re: What did you cook today?

I was impressed by this Japanese girl who reminisced about her mom's curry dish. I bought some of the curry she used, S&B Oriental Curry Powder - it is very good and I recommend it! I made lamb curry with rice I made in a new Zojirushi Neuro Fuzzy® Rice Cooker ( Christmas gift ). FANTASTIC meal,...

Re: What did you cook today?

Something different: I wrapped a bag of small South American Potatoes - purple and red flesh - in perforated foil mostly cooking on the grill for a nice smokey wood flavor. This morning I fried them in butter/olive oil and garlic. Fried two eggs over easy in the remaining brown garlic butter and cut...

I like this season of the year. The women gathering and making tamales for the family. This mornings breakfast: pork tamales, fried potatoes and onions and three eggs over easy.

It has been 80 degrees here in Southern California in December! ( not complaining ) The cherry tomatoes are still giving. Any chance you've seen anything like this in the sky lately? https://www.chefknivestogoforums.com/download/file.php?id=17524&mode=view --- These chemtrails have been sprayed...

Re: Best stones for polishing? Looking for my first "premium" polishing stones

I'll look into them but it could be a while because I have already made an order for some polishing stones. I do remember hearing that these give a much finer polish than the grit rating would suggest as they are loaded with polishing compounds. If I were to replace a "standard" 6k polish...

Check out the Naniwa Super Stones <<. They are IMO the best synthetic stone for polishing. Follow with diamond on balsa strop << if you want to take it further.

Re: On the hunt for a green onion slayer

I’m looking for a blade that will not require stone sharpening as much as my current go-to for green onions...I prefer japanese handles but I value functionality above everything. Gyuotos, santoku, kiritsukes, and nakiris are all welcome, I just need something that will mow through wet herbs with e...

Re: Thinning - Heiji

I have two Heiji knives: one a 210mm Sujihiki in semi-stainless and a 240mm iron-clad carbon. I have thought about thinning both of them but chose not to. Heiji knives are similar to Shigefusa in that they are on the thick side and wedge in dense product but the shoulders are steep and cut so well a...

Will do Sam. Should arrive just ahead of the Christmas holidays so hopefully will find some time to give it a good test.
