These little knives are fun, i am playing with the idea of an asymmetrical grind on the next version. so that the right bevel is more or less full flat ground. Sometimes its useful to have a really flat surface. This is kind of morphing into my camping knife, especially one i would take to festivals...

I think I am going to try a 2lb cleaver and i have a massive 10 lb one as well, i do have my tojiro shears but agree that would be slow and painful cutting out that many spines. Ive got a tough as nails 15n20 250mm chef knife that Ill bring for sure, its only 2.5mm thick though, a little flexy. Ive...

I don't think they intend to break down the whole birds just quite literally split in half minus the vertebrae. I had started a cleaver for splitting hogs a few months back. customer didn't hold up their end of the bargain so now i got this monstrosity laying around! I still need to heat treat it. I...

so the turnips ive been getting are small and really good raw. I sautéed them yesterday with some potatoes and I was surprised how tasty they were.
turnips and radishes have been the largest component of my farm share.....been eating a lot of them !
