I think you should get a low tipped 21cm gyuto, a bunka, or a nakiri. An usuba is a pretty distinct and sometimes not terribly useful profile. With that budget you really have your choice of the litter. I think a Matsubara could be a good choice here.

The new MM Ginsans do have my attention. The height is appealing. All the blue #2 versions look to be the taller version of the profile now.

Sadly it was only a matter of time. In a few years we will be nostalgic for the days when we could get rosewood as the body of a stock handle for no additional cost. It is my favorite handle body.

The Naniwa Pros will never help you more than they will right now. Those stones are thick enough you will have trouble wearing them out as a home sharpener, so don’t worry about using them.

European blacksmiths did the most beautiful pattern welded iron and steel work I have seen. Western, Middle Eastern, and Asian blacksmiths all concurrently developed a lot of the same amazing techniques or variations on the same.

The Koishi is the best knife I know of that fits those parameters; maybe a Takeda could be better for your style, but overall I don’t think anything flat out tops the Koishi.
