Re: Slurry and swarf
1: you are correct about slurry being stone particles in a water solution on the stone. Weather it is desirable depends on what you are trying to accomplish. For general sharpening it is o.k. and many people like a muddy stone. You are also correct about what swarf is but it is only a problem if it ...

Re: Gesshin Heiji Semi-stainless gyuto 240
The steel in these is next level. Everything I love about carbon in a semi stainless. It takes patina readily but resists rust nicely and takes and holds a terrific edge.

Re: Micro chipping on AS nakiri
I would caution you to reserve judgment on your technique and the knife until you have sharpened it at least three times. I never had an issue until I had an issue with a particularly thin ground Tanaka blue. The edge would chip and roll until I cleaned it up a few times. Now it is a badass. Don't c...

Re: Show us your new knife!
I jumped on the Tansu train as well. https://i.imgur.com/QFXWPTZ.jpg Awesome! Is this the 255? I originally bought it from the site but then wanted to have Mert install a western handle on it. He told me he had a 260 for the Show that would be better to use. How do you like it? It is the 255. The o...

Re: Removing Mazaki handle?
I've probably removed 20 + handles and had only 1 crack. 70 % come off with no heat at all.

Re: Removing Mazaki handle?
https://youtu.be/ZajZh8aps6Q I used a steam kettle to gently heat the tang inside the handle on the last Mazaki handle I removed. It was attached with silicone adhesive and didn't need to get really hot to turn loose. Just concentrate the steam at the handle tang junction and use the method above t...

Congratulations. I came by your booth when you were presenting the knife for judging I think. Sorry I missed you, but I met your dad who is a fine gentleman indeed.

Re: Black Lotus Knives
Wrought iron is low carbon steel with lots of slag (low grade). The slag gives it its lines that looks similar to Damascus but they are not nearly the same in composition. What we refer to as regular iron cladding is much more refined and likely higher carbon (though it varies greatly from one smith...

Re: Black Lotus Knives
Best case scenario, in my experience, is 10 days per person (includes shipping time) x 15 persons = 150 days or 5 months. It will be close.

Re: Black Lotus Knives
I like patina, but I would be willing to give it a rub down with some fingerstones when it come through me. I used to polish all my stuff, and still do when I first recieve them most of the time, but after that, not so much. I haven't had the opportunity to polish wrought iron cladding, so I would ...
