Re: Outdoor knives

Good looking knives. Are they forged or stock removal?

Re: Nice pair...

For the record I have never seen any blacksmith that looked remotely like this! :) If they did look this Sue wouldn't let me go to Japan. That does not mean one does not exist? Well, not particularly like an anime character. That does not work out well in real life. Regardless, that leaves me with ...

Re: No frill santoku to fantastic.

I see. I didn't realize there was a name for that, I've always just said exposed machi, from what I understand there is some utility to having that but it's relatively minimal. On burn in tangs, if the handle gets a little loose then you can wack the bottom of the handle and tighten it a little. Th...

Look at the last picture, see how there is a gap at the tang handle junction, that's Tokyo style. Konosuke does it to there knives. Just for looks.

Re: No frill santoku to fantastic.

This is one of the sharpest knives I have ever touched. It cuts before it actually makes contact! Put that on the product page! One of these customed would be a great knife. I've always looked at this as a perfect gift knife for family. Very nice look. Is the handle rounded? Looks like a bi...

No frill santoku to fantastic.

I have a co-worker who doesn't like large knives. She is an older woman and has always used a pairing knife for everything. :o My boss has found her using her Kohetsu santoku before and says she likes it. She really likes light knives. So I started searching for one for her. Light, short, all stainl...

Just use a dremel
That might work. This knife is just a tester. It has some issues I really don't like. They are only going to get better, then I will start marking them.

Now that it's hardened... thats not an option. You could do that prior to HT.

Options after HT:
Laser engraving
Acid Etch
Silk Screen.
That's what I thought. 8-)

Re: Best performer, stir fry vegy prep.

Thank you all for your responses. I think I will look into trying a Nakiri. Oh boy, another knife to want! Shibata 240 was mentioned a few times and I agree it is the greatest knife ever made,I hope to one day make a knife as great as it, but you said you wanted a nakiri. My second favorite knife i...

I am in the process of making my own touch mark. I'm not sure if I can mark this knife now because it's hardened.

First forged knife

I have been blacksmithing for the last 6 months or so. Here is my first gyuto. I hand forged it out of 52100. It measures just over 240. I heated treated it by eye and it's better 62 and 65 rockwell. The handle is Lignum Vitae with a black and white ebony ferrule. http://i1248.photobucket.com/albums...

Re: Nakiri, what to expect.

I have a Goko nakiri that I use at least 50% of the time. It has such a great grind and get stupid sharp. I use it for chopping and push cut mainly. When slicing lemons I tend to draw through them with no issues.
