Silica content in teak varies, if I recall correctly, based on age. It can be fine from experienced board shops. Cherry, walnut, and hinoki are still tops in my book, though.

The Tanaka does not have a reputation for being extremely reactive like some iron clad knives, but it will almost certainly be as reactive as the ESEE where the powder coating has been worn off. The Tanaka overwhelmingly fits your preferences best. It is not a thin knife, but it isn’t a clod, either. It is the knife I would suggest you buy.

Did you end up making a decision? No, just got back from a vacation and have to buy a new ac for the house. Have seen a couple prospects, but they seem to jump up in price so much when they have embossed kanji. Wondering if it’s really worth it. My mind immediately jumped to a Tadafusa or a Wakui.

Yes, I was referring to the stainless version of the Fujiwara. The FKM line is AUS-8 like a few other high toughness, lower hardness lines and the FKH is SK-4, which is a fairly low alloy carbon steel. Yes, it was a particularly good deal. Those were being sold at cost; a comparable Ginga with Saya starts around $100 more and I think are still a fair deal.
