Re: What did you cook today?
3 objectives here (in order): 1) Use up as much inventory as I could from the fridge 2) Try the knife on as many different ingredients as I could 3) Make a tasty soup (given all that I'm including here, this was definitely the lowest priority :D) This was a lot of fun. I'm loving this knife. The ed...

Re: What Pizza did you make or eat today?
Looks good Ben, I bet there is a learning curve to making pizza at that temp in less than two minutes. Were you happy with the results and taste? I really like who this dough had turned out in the oven a couple weeks ago. I am still learning more about this Ooni. I am very excited to get my sour do...

Re: Got a Kiln for heat treating!
Not bad, that’s almost as fast as my paragon. I hit 1500 in 30 min. 2000 in an hour. Most stainless runs take 90 min for the first set of blades, significantly less for the second.

Re: First S Grind Gyuto!
Nice! I want to get a tilting setup for mine, debating if I buy the AmeriBrade version or build one myself. I gotta do something for the tool rest for the radius platen so the height is easier to adjust to where I need it to be since the table is height adjustable, but there is no support other tha...

Re: First S Grind Gyuto!
Yeah, it worked ptetty well! I was able to cut potatoes and they stayed on the board when I lifted the knife out of the potatoes and did really well on the rutabaga too. I want to bring the hollow up a little more, so I gotta tweak the angles and where it is on the blade. I just got a prototype til...

Day 1 with the Ooni. I tried Ooni cold ferment dough because it could sit in the fridge if the delivery didn’t happen. 468C2C05-8F0B-4FA7-BD2F-E0564E6E9C8E.jpeg6772F508-CA97-4BBB-B3ED-1A1D49963236.jpeg40896BBD-4D2D-45B5-995E-FBDC50FF527B.jpeg Cool! Re: Handle removal
You may not be able to separate the wood from steel with damage. At a certain point, I value the steel more and destroy the handle.
The top could just be sealed with glue. You have tried the mallet and hard wood method and place in boiling water?

Re: Damascus Pizza cutter??
I was looking for stainless, but most bars are around 1.5-2" wide usually and the stainless damascus is MUCH more pricey! I know I can get Alabama Damascus in .100-.110" thick and 3" wide. I prefer to work stabilized wood due to my allergies, and will probably use a variety of stabil...
