I am part way though forkish’s 72 hr biga dough for Wednesday night. This will be run #2 on the Ooni. The biga smells nice and boozie.

This is so much fun. For 1095, try 1475 F. I use 1450 F if I am trying for a hamon.

Not bad, that’s almost as fast as my paragon. I hit 1500 in 30 min. 2000 in an hour. Most stainless runs take 90 min for the first set of blades, significantly less for the second.

Yeah, it worked ptetty well! I was able to cut potatoes and they stayed on the board when I lifted the knife out of the potatoes and did really well on the rutabaga too. You may not be able to separate the wood from steel with damage. At a certain point, I value the steel more and destroy the handle.

The top could just be sealed with glue. You have tried the mallet and hard wood method and place in boiling water?
