I've seen this mentioned and kinda don't get it. Presumably you're looking to obtain a degree of nonstick quality, except fond sticking and deglazing is a feature, not a bug, of stainless cookware. Something like eggs, I just don't think stainless is the proper tool for that gig, which should be lef...

This is not necessarily a direct recommendation but for fine-chopping herbs like parsley and cilantro I still use an old Henckels specifically so that I'd quickly rock without worrying. And doubly so when the leaves are wet and tend to stick to the board.
