Proper Technique for Honesuki

I just linked this video in a knife rec thread, but I think it will also be useful to the forum in general. This is a great demonstration of how to use a honesuki. First slower, then at a medium pace....

I'm a big honesuki fan. Love to see these great vids. I love buying bone in thighs; much cheaper, quick to break down, and you get a compact pile of bones for stock without filing a tiny apartment freezer with huge #*&$^*#& carcas.
