I only lost three fingers trying this.

I've tried that before... I don't know how they can do it so fast, one brown spot messes up everything.
Oh well, I'm faster with a peeler anyway. :roll:

Very impressive especially as the speed is combined with accuracy! Its worth watching at 1/4 speed as well. I suppose it is a similar technique to turning mushrooms but with a much bigger knife!!

I tried peeling with my KS and while not as awkward as I thought it would be it was nowhere near as efficient, for me, as using a pairing knife. That is beside the point and fully a fault of my lacking skill. The takeaway is that it was much more do-able than I had imagined. Makes me realize why a lot of guys just use a petty over a short paring knife. Example: My 90mm Japanese paring knives are too wide to use like a traditional paring knife, for me, and I mean how it is held. However, it is too short to choke up on like I did with a gyuto. I can see this working well on a 120-135mm wa petty with a wide blade though.

Just interesting and made me go outside of my usual method to give this a try.

I will probably drop the apple and lose some fingers in the process of trying this, but it definitely looks like a nice party trick

Classic tevhnique. I first saw this on an earlier episode of yhe original Iron Chef performed by Iron Chef Sakai. It was done using a 230mm Nenox sujihiki, one of the first Japanese knives I ever purchased. He has done this at much higher speeds. Easily exceeds my skills.
