I just watch Rick - he looks like he's working in slow motion, can direct the whole kitchen show, and is still twice as fast as anyone else - real chefs can do things us mortals cannot

I like seeing the cleavers! I just wish videos like this were not so obviously sped up. It would be nice to just appreciate the technique without the false and unrealistic emphasis on maximum speed.

The leek (?) at 2:20, the cucumber at 4:40, the live squid at 10:00, the brown thing at 11:25. Very cool. And definitely agree that all the cleavers are very cool. Seems like more can be done with a cleaver in the right hands than a gyuto.
