Good variety. Which sujihiki do you prefer between the Tojiro and FKM? Also, what gyuto is that to the left of the Konosuke?

Prefer the fkm, just a little more fluid of a cutter. That knife is the Kurosaki laser 210.

Nice collection.
Preference for westerns or is that just the way things have worked out so far?

That's definitely how things started. Only in the last year did I start opening up to wa. I can do either now, though the wa usually have more character to me. Balance in my hand still feels more normal to me, but that's 17 yrs of use talking I think.

I see it now that you mention. That is funny! That'd be one hell of a profile. It is a well rounded kit. More than I'd carry to work probably, it's fun to have so many styles though.jmcnelly85 wrote: ↑Thu May 25, 2017 9:54 pm Lol, I saw the reflection line on what looks like a big ol ikon and thought holy sh they put a ks profile on that workhorse. Re: All of my current tools
Not really that surprising. Lots of people are intimidated by bigger and/or sharper knives. My wife uses a Victorinox 3.5" parer
for EVERYTHING! You should see her trying to slice an onion with it.

That does not sound as scary as that dude on youtube dicing the onion in his hand with what looks like a machete. Maybe it was on facebook, regardless I cringed when I saw it. Anyway, petty knives are a big hit in my family. A lot of people like the 150mm FKM gyuto too.

Re: All of my current tools
I just thought for all the knives I have, how is it the cheapest looking and feeling knife is the best received. It is a good style, I like it and too. Good clearance for a 120 and compact with some versatility. I try to keep it sharp, but even when it's dull everyone thinks it's sharp. What can I say, I guess they're just easy to please

Re: All of my current tools
People like what they like. Out of everything I have tried, own or have owned my Tojiro ITK stays on my board 24/7. It is my go to knife and the others come out only when I feel like using something different. It was rough around the edges when I opened it and it performed pretty decent but I have thinned it a fair bit and now it performs awesome. In general I think most Tojro knives that I have used offer a hell of a lot of performance for the value.Chefspence wrote: ↑Sun Jun 04, 2017 8:26 am I just thought for all the knives I have, how is it the cheapest looking and feeling knife is the best received. That aside, another thing about cheaper knives is some people are less afraid to get rough with them or at least they do not worry about babying them. I was that way for a long time. I didn't even want the edge of my knife to make contact with the board. I grew out of that, though.
I bought my mom some knew knives awhile back, just what she wanted. 180mm gyuto, 150mm petty and 80mm paring knife. She only uses the petty...Well, 90% of the time.
