Re: Knives at work
forge to table. It is some guy on Instagram. Received a couple of sample knives from him to try out. I think they are Chinese made, though.

I miss this thread, ha, way to bring it back!
I'm Dave. I don't take myself too seriously and you probably shouldn't either.
Re: Knives at work
A Chinese blacksmith? Or just cheap mass produced knives?

Re: Knives at work
Chinese blacksmith promoted and sponsored by a young white guy. https://www.forgetotable.com
Noah, the owner is a pretty nice guy. He sent me the 270mm gyuto and a 210mm k-tip gyuto samples to test and give feedback. I purchased a 270mm suji from him also. They are decent for the price.

Re: Knives at work
Not at work cause they don't let me do this type of thing in my classroom, but I'm throwing this here anyway as it's nowhere close to cabbage. Looked at my knife rack and couldn't decide what I felt comfortable with to chop cashews. I suspect any of my knives would have survived, but I had zero worry with this Moritaka deba. I chop nuts more than I process fish, so this will give me another excuse to use this knife.
