I have been to tosho and they have great inventory... I have never been able to find a fuji!!

really is a sweet cutter. Typically not a fan of the "undersized" 210, but the level of performance and slight heft to the blade more than make up for it.

Yeah. Whenever I go back to my 210s, I'm reminded how they are often superior cutters in terms of gliding through ingredients. It is a simple reality: the less of a blade there is, the less you feel resistance to the blade in most foods. Having the blade itself feel a bit smaller, lighter, and easier to wield makes a difference, too.
I love my larger knives, of course. My point is just that there really is something to be said for the effortless performance benefits of an elegant, undersized 210. I guess that's why so many people love that size as a line knife...
